You may have read Omar’s story on our blog. When he was homeless, the Refugee Council made sure he wouldn’t go hungry and helped him find somewhere to stay.
As a thank you, Omar wanted to share his recipe for Zegni, an Eritrean stew made from beef, tomatoes, red onions and Berbere spices. Perfect for keeping warm and cosy!
- 3/4 cup vegetable oil
- 1kg stew beef (or meat alternative)
- 1½ tbsp cumin
- 2 tsp turmeric
- 1 can finely diced tomatoes, or 4 fresh tomatoes (finely diced)
- 1/4 cup tomato paste
- 1 small red onion, finely diced
- 2 tbsp Berbere spice blend
- 1 tbsp garlic
- 1/4 cup unsalted butter
- Add the vegetable oil to a pot and allow it to heat. Then add the diced beef or meat alternative, cumin, turmeric and the ¼ cup of tomato paste.
- Add the finely diced onions and the can of tomatoes. Stir. Cover and cook on medium heat for 2 hours.
- After 2 hours add the berbere spice, garlic and butter. Cover and cook for another 5 minutes.
- Serve and enjoy a delicious helping of winter warmth.
